Vegetable of the Week: Sweet Potato

After much encouragement from Natalia & Beth, I decided to try sweet potatoes!
I basically cut them up and roasted them with some garlic and olive oil & I really liked them.  I made too much and so I ended up throwing the rest out (which almost cost me my friendship with Beth).
I cut my finger open with the first cut of the knife and 5 days later, it's starting to close up and heal.  P.S. Thanks Marie, for supplying me with many, many band-aids!
