In an effort to become a less picky, more healthy eater, I've decided (with the help of my vegetable mentor, Beth Ann) to try a different vegetable each week.
Last night, I grilled up some eggplant slices in olive oil with some s&p and a little garlic. I sprinkled some Parmesan cheese on the top. It looked really appetizing, but I'm sad to report that I didn't like it.
I'm willing to give it another chance one day, but....yuck.
Loren sent me this recipe, which looks promising, so maybe I can whip that up this weekend.
